2 Vegetarian Recipes Which Can Cooked In Under 30 Minutes

Life is becoming busy day-by-day. People do not have time to do anything, leave alone the thought of cooking for hours. So many of us, on regular basis looks for the recipes which we can cooked easily in less time. 
Gone were the days when women use to take care of the kitchen and children and men use to be the bread winner. Now a days, both members of the family earn and cook together.
There are some easy recipes which can be cooked in less than 30 minutes and they are delicious to eat as well. Today, I am sharing 2 such vegetarian recipes with you-
1. White bean and mushroom soup
Ingredients : 
• 10-12 button mushrooms
• tbsp olive oil
• Small cube of lite butter
• 2 finely chopped garlic cloves
• 1 tbsp flour
• 3 cups vegetable stock (you can also purchase that from market)
• 1 cup white beans
• cup low fat whipped cream
• Salt & pepper to taste
Method :
• Wash and clean the mushrooms before you chop them. Do not cut your mushrooms in really thin slices. Take the heavy base pan and heat the olive oil and butter. After a minute add onion, garlic and chopped mushroom in the pan. Season them with salt.
• Salt will help in sweating of the mushroom and cook them fast. Wait for the mushroom to get sauté and stir them occasionally. After the mushroom gets golden, add the flour in the pan.
• Let the flour cook for a minute or two. Now add the vegetable stock into the pan with white beans. Turn the stove on the low heat and let it cook for 20 minutes. Stir occasionally.
• Add pepper to taste and serve immediately.
• Before serving, top your soup bowl with whipped cream. Enjoy!
2. Avocado and chickpea sandwich
Ingredients :
• 250 grams steamed/canned chickpeas
• 1 ripe avocado
• 3 tbsp of coriander
• chopped green onion
• tbsp of lemon juice (freshly squeezed)
• Multigrain bread
• Salt & pepper
• For the sandwich- lettuce, tomato slices, sprouts etc.
• Rinse and drain the chickpeas
• In a bowl, mash the avocado and chickpeas. After mashing, put coriander, green onions, lime juice. Season this mixture with salt and pepper as per your taste.
• Now take a slice of multigrain bread and place lettuce and sprouts on it. Now put a spoon full of this mixture on the bread and spread evenly. Top it up with tomato slice and sprinkle some freshly grinned pepper. Cover the sandwich with another slice of multigrain bread.
Tip- You can use bread of your choice and also put finely chopped olives in the mixture.
