Vegetable With Cheese Chowder

Here is a recipe that is sure to be a hit with your family. I have found very few people who have tried this chowder and failed to like it. This is sure to be one of those recipes which you hand down from one generation to the next. To make this delightful chowder you will need the following items:
2 Tablespoons butter
2 Tablespoons of Olive Oil
1 cup mixed Pepper Stir Fry vegetables (Sliced Green, Red and Yellow Bell Peppers and onions)
2 tablespoons of dehydrated celery       1 very small eggplant diced up
1 can of mushrooms
½ cup of Frozen Green Beans
½ cup of Frozen Broccoli
½ cup of Frozen Cauliflower
1 cup of pre-baked potatoes diced up
1 Tablespoon roasted garlic
4 cups Chicken Base
1 Tablespoon flour
1/2 cup water
1/2 cup milk
1 small bag of shredded cheddar cheese
To start out melt the two tablespoons of butter and two tablespoons of Olive Oil in a large pot. Chop up in small cubes the stir fry vegetables and the eggplant. Add all the vegetables to the pot along with the dehydrated celery and sauté it over a medium heat until they appear tender. Now add the garlic and continue to cook for another 2 to 3 minutes. Add the Chicken Base and the potatoes and bring the mixture to a rapid boil. Make a rue with one tablespoon of flour and ½ cup of water. When mixed well add it to the pot and cook until the broth is slightly thick. Using an emulsifier liquefy the majority of the vegetables in the pot. Reduce the heat to a simmer and continue to mix it or it will burn. It is now time to add the ½ cup milk to the mixture. Let it simmer until you see heat coming from it and you are sure all vegetables are tender. Stir in the Cheddar cheese and allow it to melt.
